Dustless Strippers??
I guess they prefer "dustless blasting!"
https://www.dustlessblasting.com/automotive Getting ready to take L's 356 coupe in to get the last of the sheet metal work done. And I'd like to make sure there isn't any surprises under the previous respray.

Haven't requested a quote yet. Local vender's website shows costs between $500 and $2500 depending on scope and size of job.

I seem to remember Scotty not being too happy with the results of a 'dustless blaster'.
I'd say on a car like the 356 a chemical or hand-mechanical removal of paint would be the best option. Maybe check with Eric at WillsWerks to get his 2-cents, his dad did many a 356 restoration.

If you are doing a full on 100% strip to bare metal have it baked. You get back clean metal, no media, no goo to leak out of the seams or trapped compartment zones and no pitted or warped panels. This is only an option if you plan to do a 100% strip.

CO2 or dry ice stripping is an option but it is slow expensive and not very aggressive.

The dustless thing is interesting. I read about it a while ago and it seems like they are good at selling rigs and you have to do your homework. There are several trailers for sale locally. I wonder about such a critical effort if its not done right. No interest in cleaning up after a clean up.
Let us know what you end up with please
