Under an hour is very easy if you keep a spare hub/rotor/bearing assembly on the shelf. Once you've swapped the old ones off, you can then replace the wear items at your leisure, instead of doing it in a rush to get your car back together.

don't know about 911s, but i've never spent more than 2 hours changing pads/rotors on any of my cars.
