Those are real nice bikes. For sanity sake will need to spread the rear triangle for modern wheels. Not a big deal.

The EMS fork is decent but not original not that it matters. HAHA I love seeing 42/52 rings given that d@mn near everyone runs 36/50 now.

I hear you, we have two in school as well and may be moving next month if all goes to plan

Thanks for asking about Joe, he is doing better and may end up riding the fixed gear a bit that's part of the reason for the build. He really liked the spin he took on the single.

What is the easiest way to spread the rear triangle and how much additional room is needed?

Pat I have done a bunch using threaded rod ( see video ) which gives a good result. The triangle cold sets with surprisingly low force. Plan on over expanding the total outside locknut to outside locknut measurement ( hub lucknuts ) by about 2 cm eg 132 The triangle will rebound back to 130 and stay there ( coldset ) after a few tries.....not rocket science.
