Thank you everyone who has replied to date. I broke down and got a GoPro 7 Black during the Memorial Day sales, and will hopefully try it out this weekend. I will independently also be looking into the data aspects.

Congrats. Make sure to get a couple of memory cards...64gb or higher. Suggest not recording in 4k. It makes for HUGE files that take forever to download.

Expect about 90 min of usable battery life, or you can have cameras plugged in to car power outlet.

Also, switch the frame rate from 60 Hz down to 30 Hz, half the file size at imperceptible difference in video.

GoPro 7B over the shoulder main front view, iPhone 7 running HLT mounted upper right corner of the windshield getting data and using front-facing camera to record the inset cockpit video.
