Looks ok to me as-is
 But going with DR's theme, I'll take a martini or three before dinner with a nice sherry after. Is this the special at Prime Rib?

Sear it first, so that we minimize the fluid leaks which are common are 911STeaks

that is a terriffic pic and well executed carving.
we should have more raw meat art around here. i'll start. here is a very tastefully done painting of raw meat. rather sensuous even.
