Default Clutch Kit for '87 911?

I need to finally get things moving on the clutch replacement for the Targa. When the current clutch system was installed by IMA during the motor rebuild ~15 years ago I believe an aftermarket plate was installed (i.e., springs and not a rubber center) but other than that is was nothing special.

Looking around on de interwebz, there are quite a few aftermarket kits for the hydraulic-clutch Carreras, with fancy Stage 2, Stage 3 names, etc. But I've been struggling to find any good information on what kit/ package works best for a car that is driven mainly on-track, but will see some street driving, including driving back and forth to events and sitting in stop-and-go traffic around DC.

Anyone have any experiences with aftermarket clutch kits/ packages for the hydraulic clutch Carreras? (and maybe 964s?) I'm happy to hear the bad as well as the good, as knowing what to avoid is worth almost as much as knowing which ones have a good reputation. FWIW, the flywheel is stock, and I'm hoping to not change it.
