Sounds perfectly normal.

The lower temp thermostat won't help. It will open earlier but the steady-state temps when driving in traffic on hot days are well above when it opens.

The lower fan switch would help. Alternatively, you can wire a switch to manually turn on/off the fans while retaining full function of the factory operation (I've done this for my track car).

How many miles on the radiator? Those tend to get crudded up over time, both internally and externally. I saw a temp decrease when I replaced mine.
